GRAPE VARIETES: Durella.

VINEYARDS: 3 hectares of pergola veronese on the hills of Mount Calvarina in the locality of Brenton, municipality of Ronca at an altitude of 300 metres. Clay soil of volcanic origin. 2500 vines/hectare.

VINEYARD AGE: 30 years.

HARVEST: hand-picked in 10 kg crates.

PERIOD: end of September.

FERMENTATION: grapes pressed (without destemming) and fermented in steel tanks.

AGEING: remains in steel vats on the lees until the beginning of following summer.

SPARKLIZATION: tirage after 8 months after harvest and keeping on the lees for 36 months. Manual Remuage on pupitre. After degorgement 6 months rest before release.

APPEARANCE: bright yellow.

ON THE NOSE: very typical-f the grape variety with hints of herbs and white flowers.

TASTING NOTES: fine perlage that offers a pleasant creaminess on the palate. Savory and slightly herbaceous aromatic note confirms great elegance. The 36 months mellow the acid exuberance of the Durella grape without changing its character.

PAIRINGS: cruditè of fish, Baccala, in particular mantecato and raw prosciutto.

RESIDUAL SUGAR: 3 gr/It.
