GRAPE VARIETES: Durella.

VINEYARDS: 3 hectares of pergola veronese on the hills of Mount Calvarina in the locality of Brenton, municipality of Roncà at an altitude of 300 metres.Clay soil of volcanic origin. 2500 vines/hectare.

VINEYARD AGE: 30 years.

HARVEST: hand-picked in 10 kg crates.

PERIOD: end of September.

FERMENTATION: grapes pressed (without destemming) and fermented in steel tanks.

AGEING: remains in steel vats on the lees until the beginning of following summer.

SPARKLIZATION: tirage after 8 months after harvest and keeping on the lees for 60 months.Manual Remuage on pupitre. Alter degorgement 12 months rest before release.

APPEARANCE: straw yellow with intense hues.

ON THE NOSE: fruity of yellow stone fruit and hay as well as notes fresh yeast, nettle and sage.

TASTING NOTES: fine, elegant and persistent. Fleshes ad moy france are surprisin peach, apple, sage and rosmery.

PAIRINGS: sparkling wine with character that is well accompanied with grilled fish and shellfish, rabbit and goat. Perfect with Baccalà mantecato and grilled polenta.
