GRAPE VERIETES: Corvina and Rondinella.

VINEYARDS: 16,5 hectares, in the locality of Bastia (Montecchia di Crosara), on the ridge between the valleys of Alpone and Illasi, at an altitude of 450 meters above sea level. The soils are arranged in the form of two broad plateaus and are rich in limestone - derived clays. 5000 vines/hectare. Organic cultivation.

VINETARD AGE: 15 years.

HARVEST: hand-picked in 6kg crates.

PERIOD: 2/3 week of September.

FERMENTATION: the grapes are left in the drying room until late November / early December. After, they are crushed and fermented in steel vats. Malolactic fermentation follows immediately.

AGEING: in 500 Litre oak barrelf-for 24 months followed by one year in bottle before release.

APPEARANCE: deep ruby colour with carmine red hues.

ONTHE NOSE: fruity fusion with hints of cherry. balsamic notes of liquorice, myrtle and juniper.

LASTING NOTES: elegant, velvety, and very long nish. Notes of black cherry and cocoa powder followed by sweet and penetrating spicy notes of cinnamon, juniper and liquorice.

PAIRINGS: wild game or aged cheese. Excellent pairing with dark chocolate.
